Tahini, a delicious paste made from finely ground sesame seeds, is not only rich in vitamins – it also contains a lot of calcium. It is widely used in Arab cuisine, where it is a basic ingredient of a variety of dishes such as sauces, spreads and desserts.
Tahini can be made with hulled or unhulled sesame seeds. Paste prepared using unhulled seeds is darker in colour and more bitter, but it also contains more vitamins and has a higher nutritious value. In many cases, a mixture of both seed types is used.
